Over deze koffie

This exceptional lot completely redefines what Indonesian specialty coffee can be. It is produced by Hendra Maulizar, one of the country’s most visionary producers. Starting with just 1 hectare of land, Hendra and his family expanded their farm by investing in post-harvesting facilities, which included building a wet mill, gravitational washing channels, and raised beds for drying the coffee. Today, the farm is 40 hectares, and Hendra has partnered with 70 local farmer families to help with coffee production. While the majority of farms stick with traditional wet-hulled processing, he has pushed the boundaries of coffee processing by experimenting with many different processing methods. He has also started a nursery to grow the Abbysinia varietal, a rare coffee cultivar introduced to Indonesia from Ethiopian seed stock by Dutch researchers in 1928.

The hand-picked cherries are initially placed into an oxygen-deprived environment inside sealed tanks. This meticulous fermentation process takes place under specific temperature and humidity conditions and triggers biochemical reactions within the coffee beans, leading to the development of complex flavor compounds and aromatic precursors. We tasted a rich sweetness, reminding us of ripe apricot, a bright acidity with notes of fresh raspberry and blackcurrant, anchored by a smooth, comforting vanilla finish.
