About this coffee

Grown by Hendra Maulizar in Aceh, Sumatra, Pegasing highlights the exciting new wave of Indonesian specialty coffee. Hendra works closely with 70 local farming families, utilizing washed or wet-hulled processing. Known locally as ‘giling basah,’ this is the traditional processing method used in Indonesia. Although both the name and method are similar to wet processing, the cup characteristics are incredibly different. Wet-hulled coffees are known for having a strong, syrupy body but often devoid of sweetness and with a low acidity.

This particular lot is initially subject to a dry aerobic fermentation for 24 hours before being pulped, washed, and sent to dry on raised beds. Shifting away from the more typical heavy, earthy Sumatran profiles, this coffee has a fresh, clean character, though with noticeably more creaminess than most washed coffees. It features a vibrant profile with notes of citrus and cantaloupe, balanced by a caramel sweetness and some cleaner herbal notes.
